Vegetarian, schmegetarian?what am I going to serve for dinner? Good news: there are countless easy recipes that allow you to avoid meat and still enjoy a satisfying and delicious meal.

The Internet is, of course, a goldmine of suggestions for vegetarian and vegan cuisine. There are some good finds on the Vegetarian Times‘s website (the site also includes resources for adopting a vegetarian lifestyle) and FatFree Vegan Kitchen. Kalyn’s Kitchen blog and Whole Foods Market’s Recipe Newsletter are not strictly vegetarian, but have many wonderful meat-free recipes.

If a traditional cookbook is more your style, you might enjoy any of the vegetarian eatery Moosewood Restaurant’s cookbooks or Mark Bittman’s How To Cook Everything Vegetarian, or the ever-popular vegan cookbooks by Donna Klein.
