Homemade is Better—Saturday Pancakes

Every Saturday, my family and I have made pancakes. We’ve done this for at least eight years.  This recipe is tried and true and never fails.  We usually weigh some of the ingredients, but I’ve changed it for measurement.  I hope you enjoy them as much as we have!!

 

Saturday Pancakes

Prep time: 15 minutes
Cook time 3-5 minutes
Ingredients:Dry
2 cups all-purpose flour
2 TBS sugar
1 TBS Baking Powder
1 tsp baking soda
¼ tsp Kosher salt

Wet
One egg
4 TBS Canola Oil
2 Cups Buttermilk
1 tsp vanilla

Directions:

1)      Preheat a griddle to 325-350, if you have one otherwise a non-stick frying pan on medium-high heat.
2)      Mix the dry ingredients in a mixing bowl.
3)      In a separate mixing bowl, mix the wet ingredients.
4)      Add the wet to the dry and whisk (or mix) the wet into the dry until combined.
5)      Scoop the desired amount onto the griddle or frying pan, and they will spread some.
6)      Once the bubbles on top have popped, they are ready to turn.
7)      Top with berries, syrup, whipped cream or just butter and enjoy!
